Sticky Spicy Apricot Ribs**

1 can Cooking Spray
1/3 cup Classic Delectables Apricot Jalapeno jam
1/3 cup white vinegar
1/3 cup hoisin sauce
1 teaspoon fresh grated gingerroot
1 tablespoon fresh minced garlic
2 racks baby back ribs, about 5 pounds

step 1 : Place oven rack to middle position.
step 2 : Heat oven to 375 F.
step 3 : Cover a 12 x 18 x 1-inch baking pan with aluminum foil and spray with no-stick spray.
step 4 : Mix Classic Delectables Apricot Jalapeno jam, white vinegar, hoisin sauce, ginger and garlic in a small bowl until well combined.
step 4 : Cut rib racks into individual ribs. Season with salt and pepper, placing meaty side down on prepared baking pan.
step 5 : Bake 15 minutes.
step 6 : Turn ribs, then brush with apricot glaze. Bake another 15 minutes.
step 7 : Turn ribs and brush with glaze. Roast 10 minutes more or until ribs are cooked through and begin to brown.
